This comes from my many trips to the Big Bend region of Texas. I’ve been making this steak rub for well over twenty years now, and it’s a favorite staple in my spice cupboard. But I warn you — it’s addictive!
Texas Steak Rub
- 4 Tbsp kosher salt
- 3 Tbsp Ancho chili powder
- 2 Tbsp garlic powder
- 2 Tbsp Cumin
- 2 Tbsp sugar, (substitute Stevia if sugar is a problem)
- 1 Tbsp coarsely ground black pepper
- 1 Tbsp ground thyme
- Measure all ingredients into a bowl and mix very thoroughly. Store in an air-tight container.

Apply liberally to steaks, or pork (we also love it on chicken) about 10 – 30 minutes before you plan to cook.
Note: as you can see — this makes a lot of rub. This is the quantity I always make, so that I won’t have to make it again for six months or so. If you don’t want that much of the rub on hand, cut the recipe in half.

About the Nordic Ware Grill and Sear
My first version of the Nordic Ware pan came from my Mom, when she broke up housekeeping in 2010. The older one was a cast iron grill on an aluminum pan that I used heavily until replacing just last week. I like the new version better. The grill is cast non-stick aluminum, so it’s much lighter weight and easier to handle. It cooks as well, if not better than the earlier version, and it’s much faster to clean. I line the pan with heavy-duty foil, then put 1/2 cup of water in the bottom to prevent the drippings from smoking.
Cooking method: Turn on broiler, and allow to come to full heat. Put the Grill and Sear pan under the broiler for a couple of minutes to heat up — without the steak on it. Remove from oven, and use a paper towel to rub a little olive oil on grill top. Put seasoned steak onto grill and cook to desired doneness.

Sounds delicious and I love that grill!
It’s yummy. And I’m loving the new version of the grill — I wasn’t sure I was going to, because I’d used the cast iron one for so long — but it had gotten kind of icky with build up, since I’d been taught not to over-clean cast iron.
